The Marinate Anything Marinade

To feel comfortable in the kitchen it really helps to have one or two basic recipes committed to memory. It just builds confidence. When you can make a quick marinade with just a few ingredients, one that pairs perfectly with fish*, poultry, pork and flank steak and also works on the grill, under the broiler or in the oven, you will feel like a rock star.

And it is so unbelievably easy. 

* this recipe works best on a ‘meaty’ fish such as tuna, salmon, sea bass and mahi.

Ingredients

1/4 cup honey
1/4 cup gluten free tamari
juice of half a lemon
2 tbs (or more) of fresh ginger – choppped or grated (much easier, use a microplane)
2 cloves of garlic roughly chopped or one scallion (just green part) chopped
fresh ground pepper

Combine all ingredients in a bowl, combine and pour over your protein of choice. This recipe can be easily doubled as long as you make sure the proportion of honey to tamari stays the same.

If you have time marinate the chicken, pork or steak for an hour. If rushed, do NOT worry about it, it will still be very flavorful.

Fish should not be marinated for more than 15 minutes; it will start to break down and become mushy.

I cook the protein in the marinade and let all that liquid caramelize and reduce. It may be against food safety rules but that’s just how I roll. Yup, that’s me. A total rebel.
