Quick Spicy Pineapple Salsa

Want to spice up you sex life? I mean dinner. Make this quick spicy pineapple salsa and serve it along side your simply grilled/broiled/roasted chicken/fish/fish tacos/pork. It’s so easy, can be made a day in advance and requires nothing other than a chopping board and a knife. I buy the cubed pineapple from Whole Foods. Yes, you heard me. It’s a huge timesaver but do not use canned!

This summer when you’re sitting outside grilling, you’ll think of me. 

Quick Spicy Pineapple Salsa 
(all measurements are casual, do not stress)
2 cups fresh pineapple, chopped into 1/2 inch pieces
1 cup grape or cherry tomatoes, halved
2 scallions chopped
1/2 cup well washed cilantro chopped
1/2 or a whole (you decide how much heat you want) serrano or jalapeño finely chopped
juice of 1/2 lime
2 tsp agave syrup
2 tsp olive oil (optional)
sea salt to taste

Mix all ingredients in a bowl and let sit at room temperature for a bit (or make the day before) to allow the flavors to meld. Serve over grilled fish (or as garnish for fish tacos), grilled chicken and it works beautifully with pork loin or chops.
