We love to eat fish, but as I’ve mentioned in previous blog posts, not having a grill makes it necessary to find fish recipes that can be made in the oven or broiler. Also, not wanting to spend my entire life in the kitchen leads me to discard those recipes that require too much planning and prepping. I found this recipe on Yummly. If you’re not familiar with this website well then you’re welcome and I’m sorry. You think Facebook and Houzz are a time suck? Yummly is a WHOLE other dimension.
Thai Inspired Mahi (or Halibut or Cod)
4 (approximately 5oz) Mahi fillets (or more if you’re feeding more people)
1 cup coconut milk (go full fat, there’s so much flavor there)
1 1/2 tbs chopped mint
3 tbs chopped basil (thai basil if you can find it)
3 tbs chopped cilantro (with stems…it’s easier and more flavorful)
2 tbs chopped lemongrass
2 crushed garlic cloves
1/2 tsp brown sugar
salt and pepper to taste
Preheat the oven to 400.
Add all of the ingredients – except the fish – to a bowl and mix well. Pour all the marinade into an oven safe baking dish and make sure the fillets are well coated. Cover with plastic wrap and marinate in the fridge if you have time (turning the fillets every once in a while), if not blow it off and put it right in the oven. Bake the fish for about 20 minutes until they flake easily. Serve alongside rice or quinoa and make sure to pour the incredibly delicious sauce all over your plate.
